How to obtain many different sublayers with each individual piece of a logo in Illustrator?

Okay, so I was asked by my Graphic Design teacher to create a logo for my school's new bowling club. My instructions were to modify the picture of our mascot to include a bowling ball and pins and other things like that. That part is fine I understand how to do that. But I think I'm having trouble with the simplest part. How do I make this whole thing into individual pieces that I can edit and work with. Right now, everything is selected with a red box around the entire logo. I've done it before just forgot how, and I'm a little rusty with Illustrator. Thanks in advance!
